  6. Place in the oven and cook for 20-30 minutes, until the leeks are tender, the sauce is bubbling and the topping is crisp and golden. Serve with salad and bread.

Cook leeks, stirring, until mixture begins to thicken; stir in Parmesan cheese. Add a cup of chicken broth and boil liquid down by half. Add cream, salt, and pepper and reduce until thick and perfect. Add a dash of cayenne and a few drops of lemon juice. Creamed leeks are a great side for roast chicken.
