Instructions to make Kerala_egg_roast:
  1. Boil the eggs and remove the outer layer and keep aside.
  2. Take a mortar-pestle,add black peppercorns,ginger,garlic and fennel seeds,crush it coarsely and keep aside.
  3. Now,heat a wok add coconut oil,add the coarsely ground paste and saute on low flame..(be careful that it shouldn't be burnt),add onions, curry leaves,saute till becomes translucent.
  4. Add turmeric,kashmiri chilli powder, garam masala, coriander powder and a pinch of sugar and salt. Saute well.
  5. You will see the oil starts seperating by the sides,add tomatoes at this point and cook until becomes mushy.
  6. Add half a cup of water and close the lid.
  7. Bring a boil,open the lid add the boiled eggs and saute/roast the eggs in the masala very well.
  8. Keep stirring constantly for 5mins.
  9. The colour changes to dark brown…switch off the flame
  10. Garnish wdh curry leaves or coriander leaves as per your choice
  11. Kerala egg roast is accompanied by appam,idiyappams or chapatis or goes well wdh steaming dal-rice combo too.
