Murukku recipe - Murukulu or murukku is a deep fried Snack made with rice flour and dal flour. Chakli, chakuli, chakralu and jantikalu are the other Indian names to these. There are so many varieties of murukku, the one I am sharing here is a basic, very old and standard recipe that is followed by many South Indian women.

The ingredients needed to make Murukku:
  1. Take 4 1/2 cups puzhgal rice,/parboiled rice
  2. Make ready 2 cups roasted gram flour/ pottu kadalai
  3. Make ready 4 tbspn black sesame seeds/elzhu
  4. Prepare 6 tbspn cumin/jeera seeds
  5. Get 1 tspn red chilli powder
  6. Prepare 15 green chillies
  7. Prepare 200 g vanaspathi
  8. Make ready Oil for deep frying
  9. Prepare To taste salt

Butter murukku recipe - also known as benne murukku, benne chakli or venna murukku. Murukku is a deep fried crisp snack made with rice flour and gram flour. These are eaten through out the year and is most commonly made during festivals. Butter murukku is a lighter version of the traditional murukku or chakli.

Steps to make Murukku:
  1. Soak rice for 3 hours minimum.
  2. Take roasted gram in a blender and powder. Seive into a mixing bowl.
  3. Take green chillies,salt and some rice in a mixer and grind to fine paste.
  4. Add the remaining rice in a grinder and grind to thick paste adding very little water.(you can add the green chillies batter also along with this to mix before taking the batter)
  5. Melt vanaspathi. Add sesame seeds, red chilli powder and cumin seeds. Pour vanaspathi and knead well. Check salt and chilli.
  6. Grease the back of the plates with oil. Heat oil in a heavy bottomed kadai. Meanwhile press the batter into murukku press with single star design and spin as shown.
  7. Flip the plates into hot oil. Turn and cook both sides till the bubbles in oil subsides.
  8. Drain the oil. Cool and store in airtight containers.

These are very light, crunchy and have a nice flavor of butter.
