The ingredients needed to make Rice Murukku(chakli):
  1. Prepare rice flour
  2. Take melted butter
  3. Get Salt
  4. Get Oil frying
  5. Get white sesame Seeds

Murukku turns hard if you add less fat or if the dough is too tight. Murukku absorbs more oil if the oil temperature is less or if the dough is sticky and wet. Chakli is a deep fried savory snack which is spiral in shape and is usually made with rice flour, chickpea flour or lentils like black gram (urad dal). There are different versions depending on the type of flour you use.

Instructions to make Rice Murukku(chakli):
  1. In a bowl add rice flour, sesame seeds, salt and give a quick mix with hand or spoon.
  2. Now drizzle the melted butter. - Rub the rice flour in between your fingers so that the flour is coated well. Then add in water slowly to form a soft dough.
  3. Let it sit for 10 minutes. Grease the chakli maker from inside. Grease the Chakli attachment "star" disc too. - Now form a log out of the dough as thick as the chakli maker and place it inside the maker.
  4. Attach the handle and secure it tightly. - You will need a parchment paper or a tray ready for placing the chakli spirals.
  5. Now roll the handle of the maker in a circular motion and extrude the dough making spirals.
  6. The size of the chakli depends on you. Just make sure that the spirals are not spaced out but an intact coil. Once you are happy with the size of a chakli then stop rolling the handle and secure the end with your finger tip. Similarly make as many spirals as needed.
  7. Heat enough oil in a frying pan for deep frying. (MEDIUM HEAT). Once the oil is heated, check by dropping a tiny dough piece. If it floats to the top immediately then the oil is too hot and chaklis wont be crispy. The dough should float up gradually.
  8. Fry the chaklis until golden brown, flipping mid way.
  9. Place them on a absorbent paper to get rid of excess oil. - Let them cool down before eating.

A super close variant is known as murukku in South India. Repeat the same step and make more murukku. When the oil is sizzling hot,add a small portion of the dough and check if oil is ready. If it comes up immediately,then oil is ready to fry. Slide in the made murukku in oil and fry on medium flame.
