  10. Get 1/4 tsp saffron

  12. Take 2 drops pink food colour
  13. Take 1/2 tsp rose water (not the cosmetic one)

Light, creamy and sweet, this chilled rice pudding flavoured with rose water is the perfect accompaniment for a hot summer day or after a spicy meal.

Instructions to make Rose phirni / Rose kheer / Rose payasam:
  1. Saute the chopped nuts and rose petals in ghee. Or you can saute the nuts and toast the rose petals separately.
  2. Take basmati rice in a mixer jar. Grind it coarsely and set aside.
  3. Boil milk then add rice mixture.
  4. Keep cooking in low flame, let rice cook (It should be soft and mashable)Take care that rice doesnt stick together.
  5. Add sugar after rice is cooked. Mix well.
  6. Add rose syrup and optional ingredients and cook till it thickens.
  7. The consistency should be thick and creamy. It further thickens with time so switch off accordingly. Add chopped nuts and rose petals. Mix and turn off.
  8. Serve warm or chilled and garnish with rose petals or chopped nuts! Enjoy !
