Koftay banany ky lye,qeema bareek pissa ho.khuskhas ko buht achi tarha wash kar ky pani main soak krdain 15-20 min then drain water.choti bari Illachi ki skin remove kar ky seeds nikal lain.
Bhunny channy,khuskhas,salt,lal mirch powder grind krlain powder form main.
Qeema achi tarha wash kar ky channi py rakhain pani nikal jay tu food processor main grind krain. Powdered masala, haradhania,harimirchain,dahi ky sath.
Qeema achi tarha grind kar ky bowl main nikal lain. Hath py zara sa pani ya oil laga kar medium size koftay balls bana lain.1 kg qeemy sy medium 20 koftay bun jayingy.
Piyaz slice krlain.oil medium flame py rakhain aur piyaz golden fry kar ky nikal lain.
Dhania powder,lal mirch powder, salt ko 2 Tbsp pani main soak krdain.dahi beat krlain.
Golden fried piyaz ko hath sy achi tarha choora krlain. (Paste nahi banana).jitni achi piyaz crush hogi masala utna acha bany ga.
Handi ky oil main soaked masala add krdain.2 min bhoon kar crush piyaz aur dahi add krdain.
Masala achi tarha bhonnain.oil surface py ajyay ga.
Koftay masalay main add krain. Koftay add kar ky spoon nahi lagana. Sirf handi ko hilla lain. Low-medium flame py cook krain. 1 cup pani add kar ky pakny dain. Handi ko full cover nahi karna.
Kofta knife ya spoon sy check krlain.qeema ander sy full cook hogya ho tu curry ki consistency adjust krlain. Agar shorba chahye tu 1-1/2 cuppani add kar ky paka lain..agar bhuna masala rakhna hu tu flame off krdain.
Zaiqydaar kofta curry tayyar hy. Naan ya parathon ky sath paish krain.
