The ingredients needed to make Arroz Verde:
  1. Prepare 1 cup Basmati rice
  2. Prepare 3 Jalapeno pepper or Poblano pepper [ stems and seeds removed]
  3. Take 1 cup vegetable or chicken broth
  4. Take 1/2 cup onions
  5. Take 1/2 cup cilantro [ coriander leaves]
  6. Take 1/4 cup Parsley
  7. Take 4 garlic
  8. Get to taste Kosher salt
  9. Make ready As needed olive oil
  10. Take as needed scallion [ spring onion greens ] to garnish
Instructions to make Arroz Verde:
  1. Heat olive oil in a wok, add chopped onions and sauté it for a few minutes. Salt it
  2. Now add chopped garlic and jalapeno peppers. Sauté it until tender.
  3. Remove from the wok and let it cool. now put it in a blender along with chopped parsley and cilantro and make a puree.
  4. In a pot, heat oil over a medium heat add rice and roast it until the rice is golden brown.
  5. Now scrape out the jalapeno- onion purée from the blender into the rice. Stir to evenly mix the purée with the rice. Let it cook for a minute or two
  6. Then add the vegetable/ chicken broth. Adjust water and salt.Bring to a boil, then reduce the heat to a low simmer and cover the pot.
  7. Let cook on a very low simmer for 15 minutes, or as long as your package of rice indicates is the right cooking time for your rice.
  8. After the cooking time indicated on your rice package, remove the pot from heat. Uncover the pot and place a clean terry towel or dish towel over the pot, and then re-cover. The towel will help absorb excess liquid as the rice continues to cook in it's own steam. (If you don't have a clean towel, you can skip this step, just cover normally.) Let it sit for 20 minutes
  9. Garnish it with scallion. Fluff the rice with a fork and serve.
