Prepare 1/2 bowl maida(almonds)

Take As per taste Kashmiri chili powder
Take as needed Salt
Make ready 2 tbsp lemon juice
Prepare For Hot spices–
Prepare Pinch sugar
Get 1/2 bowl peas
Make ready Pinch hing
Take 1 tbsp Coriander leaves
Take as required Oil for frying
Get Pinch Cumin seeds
Instructions to make Matte Samosa:
First grind in a bowl, take raisins and wheat flour, add salt, ajma and oil to it and make flour with warm water. Rest this bound flour for 30 minutes.
Peel a squash, grate it and mash it. Now take oil in a pan, add neem leaves, asafoetida and cumin, add onion, stir and add ginger chilli paste. Add all spices like turmeric, red chilli powder, salt Mix spices, coriander, lemon juice and sugar then add mashed potatoes and then add these peas and add some green coriander and mix well and turn off the gas.
Now make a round loaf out of the dough and cut it into rectangular shapes. Then make two identical strips by cutting them in the middle of this rectangular shape. Arrange the strips one vertically and one horizontally in this way. Stick it on top, then do the same on it's side. Now cut the other two sides with a knife.
Then arrange the strips from one side to the other. Apply a little water on the edges of all the strips so that the strips stick together. Prepare all the samosas in this way. Frying over slow heat makes the samosa very crispy then it looks very tasty to serve this samosa with green and red sauce.
