They are very easy to eat, with a lightly crisp texture that truly does melt in baby's mouth. Before last sugar addition, add vanilla.

  2. Prepare 1 Pinch Salt

I'm sure you know why =) hehe As I started this blog, my goal was really to try to go back to things that I'm passionate about and I've always wanted to become a more curious person (since that's really how you will learn things and develop hobbies!) as.

Steps to make Melt-in-Mouth Meringues! Lovely!:
  1. Preheat oven to 140 degrees C.
  2. Line up your baking tray with a sheet of parchment paper or wax paper.
  3. Now lets get started.. Put the egg whites into a medium/large bowl (Make sure your bowl is super clean & dry) and beat it until frothy with an egg beater or a hand mixer - hand mixers are the best :)
  4. Add a pinch of salt to the frothy egg whites (this helps stabilize the egg whites) and beat under medium speed until soft peaks are formed.
  5. Add the super fine caster/powdered sugar gradually to the egg whites until the mixture looks shiny & stiff peaks are formed. Make sure you don't add in the sugar all at once, add them gradually.
  6. The best way to make sure the sugar is completely dissolved is to take a bit of the mixture and rub them between your thumb & index finger and if it feels smooth you're done! if not you need to beat it till sugar completely dissolves & feels smooth between your fingers.
  7. Add in the vanilla extract (or any other extract of your choice) and beat it for few sec's until it gets completely incorporated into the meringue mixture.
  8. Final step is to spoon them into the baking tray. you can use a pastry bag for this, but i love to spoon them into small dollops.
  9. Bake them in the oven for 1 hour (depends on the oven settings) till the meringues turn slightly pale. To check whether its done, lift it off the wax paper and if it comes out clean without sticking to the paper.. You're Done!
  10. Let them cool completely before you pop them into your mouth :) You have some lovely Melt-in-Mouth Meringues.. Enjoy!
