Murukku recipe - Murukulu or murukku is a deep fried Snack made with rice flour and dal flour. Chakli, chakuli, chakralu and jantikalu are the other Indian names to these. There are so many varieties of murukku, the one I am sharing here is a basic, very old and standard recipe that is followed by many South Indian women.

To begin with this recipe, we have to prepare a few ingredients. You can cook rice murukku using 11 ingredients and 4 steps. Here is how you cook it.

The ingredients needed to make Rice murukku:
  1. Prepare 3 cup rice flour
  2. Get 1 cup refined flour
  3. Make ready 4 spoon yoghurt
  4. Get 4 spoon home made butter
  5. Prepare 2 spoon cumin seeds
  6. Prepare 2 spoon red chilli powder
  7. Take to taste Salt
  8. Get 2 spoon carom seeds
  9. Prepare 2 spoon oil
  10. Take Milk + water for dough making
  11. Take Oil for deep fry

This is a very simplest, easiest and can be called as the basic recipe or beginners guide to practice chakli/murukku making in-home, as there is a no chance of any flop. Press the murukku in the back of ladle. If the murukku gets cut while pressing, you need to add more water to the dough. If it rises to top immediately, oil temperature is right.

Steps to make Rice murukku:
  1. Take bowl and mix rice flour,refined flour, yoghurt, butter, carom seeds, cumin seeds, red chilli powder, salt. Now pour water+milk little by little till make smooth dough.
  2. Heat oil in kadai. Fill the mould with dough. Now press and make spirals on news paper.
  3. Place the murukku in the kadai. Deep fry at slow flame till it become golden brown and crispy.
  4. Cool murukku completely and store in the air tight container.

Lower the flame to medium and drop one or two murukku per batch based on the size of kadai. This is the basic murukku recipe. It is crispy, deep fried, spiral shaped South Indian snack that served as a snack with a cup of tea or coffee. This rice murukku is usually made during festivals liked Diwali and Krishna Janmashtmi (Gokulashtami). Instant rice flour murukku is the one that uses only rice flour as the main ingredient.
