The ingredients needed to make Changezi Paneer:
Take 300 gms Paneer
Prepare 3 Tomatoes
Make ready 3 Onions
Get 1/2 Cup Dahi
Take 2 Table Spoon Ginger Garlic Paste
Take 3 Table Spoon Besan
Make ready 1/4 Cup Desi Ghee
Take 2-3 Table Spoon Refined Oil
Take Khade Masale
Take 2 Dried Red Chillies
Prepare 4 Choti Elaichi
Prepare 4 Laung
Make ready 2-3 Sabut Kaali Mirch
Make ready 1 Badi Elaichi
Make ready 1 Tej Patta/ Bay Leaf
Prepare Spices
Get 1.5 Tea Spoon Haldi Powder
Make ready 1 Tea Spoon Chaat Maslaa
Get 5 Tea Spoon Dhaniya Powder or 2 Table Spoon Dhaniya Powder
Chop Onions very-very finely, grind tomatoes, 1 Table Spoon Ginger Garlic Paste & Green Chillies finely into purée in a mixer Grinder.
Cut Paneer into medium size cubes, the put it in a bowl with 1 Table Spoon Ginger Garlic Paste, 1.5 Teaspoon Haldi Powder, 1 Teaspoon Chaat Masala, 2 Table Spoon Besan, 2 Table Spoon Dahi, 2 Table Spoon Oil, mix them properly & let the marination rest for 10-15 minutes.
Meanwhile, take a Kadhai, add Khade Masale in it & keep the gas on low flame.
First cook them till a fragrance start coming out of Kadhai, then add 1/4 Cup Desi Ghee in it & let them sizzle.
When they start sizzling, add finely chopped onions in it & roast them till they are golden brown in colour.
Now after 10-15 minutes, take a pan, add 2 Table Spoon Oil in it & keep the gas on medium flame.
When oil gets heated up, fry marinated paneer cubes till they start turning into golden brown in colour.
When the turn into golden brown colour take them out in a plate or bowl & keep it aside.
When onion are 60-80% cooked, add 1/2 Teaspoon Haldi Powder in it & roast it till they onions are 100% cooked.
Then lower the flame, add 1/2 Cup Dahi in it & start stirring it immediately so that it doesn’t get burned.
Then add finely grinded tomato purée with 1 Teaspoon Salt so that they start releasing oil quickly.
After 5-6 minutes, when they start releasing oil, add spices mix & roast them for 2-3 minutes.
After 2-3 minutes, add roasted paneer cubes with some water, 1 Teaspoon Garam Masala, 3/4 Teaspoon Roasted Jeera Powder & 1 Teaspoon Kasuri Methi.
Mix them properly & let them cook for 3-4 minutes.
After 3-4 minutes, Your Changezi Paneer is ready to be served.
