Soak both Lentils and Rice for a good 5 hours. Grind and make a semi-thick Dosa batter as usually, we do. Add salt and mix well. Spread Dosas on a nonstick tawa and use Oil as needed. For every Dosa, an Egg is required. As soon as you spread it, break an Egg on it. Cover and cook on a low heat for 2 minutes and then top it up with the Mozzarella Cheese. Sprinkle some Red chilli and Parsley flakes both. Allow it to cook just until the cheese melts. That's it.
Serve it right away. This is a super-duper combo for the Children. They will definitely love to munch on them. Though it is a full meal on its own, you can serve it with their favorite Ketchup alongside. For the adults, I served them with Fried Bengal Gram Chutney. Enjoy!
My innovative idea at it's best. The mere mention of the name makes it clear that is a fusion of both the egg and the cheese as well.
